10 Min Tomato Pasta Sauce

Organic Tomatoes

YIELD +- 1.2l

INGREDIENTS

TOMATOES                    1KG

ONION                            1/2

FRESH GARLIC            1 CLOVES

FRESH BASIL                 +- 5 Good leaves

TOMATO PUREE          30GR

WHITE VINEGAR         80ML

SUGAR                            ¼ CUP

WATER

SEASONING

METHOD

Quarter the tomatoes, lightly crush the garlic and roughly chop onion before placing in a med sized pot with olive oil. Fry till onion is glazed. Add cold water and all other ingredients so that the tomatoes just peak out of the surface. Bring to the boil. Continue boiling for 5 min.

Remove from the heat and Blend using a hand blender while still hot, don’t use any form of jug blender. Put through a sieve before seasoning well with salt and pepper. Depending on desired consistency, you can return it to the heat and reduce it more bit be careful not to over concentrate your flavors.

This is a great, fast versatile sauce that can be used in pastas and mince, served with meats and fish, or even a straight up tomato soup. Give it a go and have fun!
