Traditional Melkkos

Ingredients
2 litre full cream milk
1 cinnamon stick
2 cardamom pods, lightly crushed
125 ml sugar
300 ml cake flour
5 ml salt
25 ml butter
Extra butter and cinnamon sugar to serve

Method
Heat the milk, cinnamon stick, cardamom pods and sugar slowly to boiling point. While the milk is being heated, mix the flour and salt and rub the butter in until it resembles breadcrumbs.

Remove the cinnamon stick and cardamom pods from milk. Sprinkle crumb mixture in boiling milk and simmer for 8 minutes, while stirring with a wire mixer.

Serve the melkkos with a knob of butter and sprinkle with cinnamon sugar.
